La Riganella è un dolce del periodo pasquale la sua forma simboleggia il concetto di rigenerazione ciclica della vita, che si esprime attraverso la forma del cerchio e della spirale, molto diffusa nell’iconografia bizantina. Il suo nome si deve invece alla presenza dell’origano ingrediente insolito nelle ricette dolciarie, insieme a mandorle, uva sultanina e cannella.
